There’s a mix of emotions in the air today. A year ago, Minnesota’s music legend Prince suddenly left a huge whole-note-sized hole in the hearts of fans around the globe. As I’ve been stirring up a quick Superior Trail Mix recipe for our North Shore trip to Lutsen next weekend, the radio spins all the favorite, fantastic and funky Prince mixes & music from past decades…I can’t help but feel pretty darn proud to call Minnesota home.
This snack mix, made with Minnesota in mind and in heart, celebrates some tried and true local flavors and favorite ingredients. Let’s start with the mini dried blueberries, little orbs of purple + sweet goodness. The real-deal wild fruits ripen in secret blueberry patches scattered across Northern Minnesota in July. If you happen to be in Cook County over the summer months, and if you happen to love berry picking, then here you go! Next, Chex. In full disclosure, Chex cereals hold a special place here in our cupboard. I’ve been working with Chex and General Mills Cereals for many years as part of my day job. I crush on Chex in all its crunchy goodness, one lattice square after the next. Here I used Corn Chex, of course, because the crop is king in the state where farmers grow more than a billion bushels annually. You’ll also see almonds added for the protein, crunch and a nutritious boost.
The other ingredients that make this snack mix sing include Minnesota-made maple syrup and honey, blueberry spread, and last but not least a cameo appearance by Justin!
I hope you enjoy this tasty combination of maple, almond and blueberry stirred together into a grab-and-go crunchy snack. Can’t wait to lace up those kickers and hit the Superior Hiking Trails next weekend! I’ll be humming Starfish & Coffee, Paisley Park, 7, Pop Life, 1999 and Delirious while remembering those cherished lyrics from one of my all time Prince faves: “I don’t want to stop, ’til I reach the top. Sing it. We are all a star!”
Superior Trail Mix
Make sure oven rack is centered and preheat oven to 300°F.
In medium bowl combine 4 cups Chex cereal and 1/2 cup chopped almonds. Set aside.
Mix together into another medium bowl:
- 1/8 cup blueberry spread
- 1/8 cup maple syrup
- 1/8 cup almond butter
- 1 squeeze honey (and why not give your honey a squeeze while you’re at it)
Microwave for :30 seconds; stir and if needed heat for an additional :20 to :30 seconds till fully softened and very stir-able.
Toss the microwaved mixture with the cereal and nuts until well coated.
Pour onto an ungreased baking sheet and place in oven for 25 to 30 minutes, stirring every 10 minutes or so. Remove from oven, toss in dried blueberries and allow to cool before portioning out into easy-to-take containers fit for your backpack or for your desk snack.
